Birgitte was born in Denmark where meals were the center of her family life. From an early age on she knew her passion was cooking. Birgitte is a graduate of the Natural Gourmet Institute for Health and Culinary Arts in New York City. She has worked as a head chef in Denmark, Sweden, Australia and the United States. In addition, Birgitte was certified in Denmark as a practitioner of Shiatzu massage, Reflexology, Hatha Yoga and Spiritual Healing.
In 2004, Birgitte earned certification as a Nutritional Therapy Practitioner (NTP) by the Nutritional Therapy Association in Olympia, Washington. In 2012, Birgitte achieved recognition as both a Certified Healing Foods Specialist and a Gut and Psychology Syndrome (GAPS) Practitioner. In her private practice, Nature’s Way Food, Birgitte integrates all of her training into a comprehensive, holistic approach to wellness. She works with individuals to identify their inherent weaknesses and nutritional challenges and supports them in their journey toward a state of optimal health. Her primary focus is to restore health to the gut as the gateway to wellness and balance, accomplished with cultured and fermented superfoods, rich in enzymes and probiotics. She encourages her clients in the selection of nutrient-dense, organic whole foods and guides them in proper cooking methods allowing the foods to retain their nutritional value.
Birgitte is a talented culinary instructor and teaches both private and public cooking classes for children and adults. She is a regular instructor for PCC COOKS – PCC Natural Markets cooking school. She also teaches nutritional health and wellness classes around the greater Seattle area.
